Low-Carb Pizza So Good it's Stupid

This pizza stems from something I found on the best keto-recipe site on the interwebz, Ruled.me. It's very close to the "Low Carb Pepperoni Pizza", with just a few minor changes. If you haven't checked out Craig's site, do yourself a favor and get in there.

I've tried several low-carb/keto pizza recipes to date, and they're typically decent and/or passable, but none of them have ever had me thinking "Damn, this is actually better than the real thing", until now.

Pizza Crust Ingredients

Eight ounce ball of mozzerella cheese

1.5C Almond Flour

4TBSP Coconut Flour

3 TBSP Organic Cream Cheese (~1.5 oz.)

1 large Free Range Egg

1 TBSP Trader Joe's 21 Seasoning Salute

1/2 tsp Himalayan Sea Salt

1/2 tsp Pepper

1 tsp Olive Oil

Toppings

1C Raw Cheddar (either a bunch of thinly sliced pieces, or shredded)

1/2C Vodka Pasta Sauce

Sliced Pepperoni (or another topping of your choice)

Sliced baby bella mushrooms

21 Seasoning Salute (this will be sprinkled on top, in addition to being in the dough mix.

Tools

Food processor or high powered blender

Large glass mixing bowl

Parchment paper

Cookie sheet

Directions

Preheat oven to 400F.

Throw the 8oz ball of mozzerella into your food processor/blender and blast it into bits.

Dump cheese into microwave safe glass bowl (not plastic), and heat it for about 90 seconds or until the cheese is fully melted. Make sure to stop heating it before it starts to turn brown.

Mix in 3TBSP cream cheese and 1 egg.

Add almond flour, coconut flour, 21 Seasoning Salute, sea salt, and pepper. Mix well.

As you mix, it should start cooling and getting thick. At this point use your hands to knead the dough and form it into a round ball.

While still in the bowl, drizzle 1tsp olive oil on top of the dough ball. Use your hands to roll it around and get the ball completely covered in the oil.

Flip a cookie sheet face down, and cover in a sheet of parchment paper (the bottom side of the cookie sheet will allow the pizza to expand without hitting the borders).

Place the dough ball in the center of the parchment paper on the cookie sheet. Press the dough out with your hands, slowly forming a circle. If you'd like, you can pinch up the edges of the circle a bit to form a more rounded crust.

Bake the crust for 10 minutes.

Remove from oven, flip the crust (might be easier with two spatulas coming from each side since it will still be a bit soft).

Bake for another 3 minutes.

Remove from oven. Ladle on the vodka sauce (however much you want), 1C Raw Cheddar cheese, mushrooms, and pepperoni, in that order.

Bake for another 4 minutes, or until all the cheese is melted.

Remove from oven, sprinkle 21 Seasoning Salute on top, and eat that shit.

Even though the pizza isn't that big, it's quite filling. You could likely split it between two people. Give half to Amber.

Obviously, feel free to deviate on toppings...any veggies you want, strips of chicken thighs, ham, bacon, liverwurst, sardines, pork belly, ground beef, tears of your enemies, etc.
