Keto Chocolate Mousse Recipe

This stuff is not only delicious, but also super easy to make.

Although generally speaking, mousse is considered a dessert, don’t limit yourself to that line of thought with this recipe.

With Low Fat Meals

One of the struggles with keto diets is figuring out how to get enough fat with each meal. If you’re eating a rib-eye or pork belly, its really not a problem. But what if you’re in the mood for a good old fashioned chicken breast, or a snack like an EPIC bar? Well you’re going to have to add a bunch of fat. I’ve been known to have a tablespoon each of Kerrygold butter, coconut oil, and olive oil along with a meal or snack like this, which is fine, but not exactly delicious. This is a good time to incorporate Keto Mousse.

Between Meal Pick-Me-Up

Once you’re keto-adapted, appetite is rarely an issue. Most of my clients report that they can fast 18 hours or more and still feel great. But there are times when for whatever reason (stress, extra activity, etc.), you will get hungry at an inopportune time. Maybe you’re in the middle of a project and don’t have time to cook a meal. The typical carb-adapted person would hit up some chips or candy, giving their brain and body the glucose that its used to functioning on. But in a keto-adapted state, your body needs fat. Grab a small bowl of Keto Mousse and you’ll get a fix of fat and MCT’s for your brain to hold you over for meal time.

Dinner Parties/Holiday’s With the Relatives

When you’ve got specific dietary needs and you find yourself eating in a group, its likely that one of two things, or two of two things will happen. The first being that you feel like a self-righteous asshole for turning down the cherry pie/brownies somebody baked for everybody, and you don’t want to make a scene about it. The second being that everybody else assumes your mentality to be “I’m just going to stick to my weird diet while these idiots stuff their fat faces and get morrrre diabetes”. Problem solved. Bring a big batch of Keto Mousse to the next gathering and serve it up to everybody for dessert. It’s a triple-win scenario, because you get to stick to your diet without felling like an asshole or pissing other people off, they’re actually going to like it because this stuff is legit, and thirdly, you might actually turn somebody on to a healthier way of eating once they realize that they can eat something this good, all the time, and not even feel guilty about it. It just might spawn some interesting conversation.

Along those lines, something interesting you’ll notice is that even though it tastes awesome, you’ll find it quite hard to overindulge. Since its made almost entirely of fat and fiber, it sends the appropriate satiety signals to the brain, as opposed to one that tastes similar but full of sugar, which you could just keep eating until you ran out of. This is really why its hard to overeat in ketosis in general, appetite signaling functions optimally instead of your brain telling you it needs more calories even when you’re in a surplus. For example, pork rinds are great, but its almost impossible to eat an entire large bag of them and its quite easy to eat a large bag of chips.

What you’ll need

  1. Large mixing bowl

  2. Hand mixer (don’t use a regular blender)

  3. 4 Cups pastured/grass fed heavy cream

  4. 4 Tablespoons 100% Cocoa

  5. 3.5 Tablespoons Stevia

  6. 5 Tablespoons coconut oil

  7. 1.5 Tablespoons psyllium husk

How to make it

  1. Pour all 4C of heavy cream into the mixing bowl.

  2. Add the cocoa, 1TBSP at a time while mixing with the hand mixer on medium.

  3. Add Stevia and mix.

  4. Melt the coconut oil in the microwave. Let the melted oil cool for a few minutes (make sure it's not still hot), then slowly pour in to the bowl while mixing.

  5. Add psyllium husk and mix.

  6. Turn the mixer up to high, with the beaters half in/half out of the mixture to circulate air. Once it starts to really thicken up, then bury the beaters in the mixture and ensure everything is evenly distributed for another 30 seconds or so.

  7. Chill for two hours.

It tastes great by itself, but you can also top with a bit of whipped cream and/or wild blueberries or strawberries (these toppings will only add a few grams of carbs).
